Old-fashioned potato salad

Old-fashioned potato salad, as we call it, is a classic side dish we eat many times during the summer. The combination of crispy radishes, chives, and creamy dressing makes everything come together in a higher unity.

In my opinion, it’s best when new potatoes come out, but it can also be eaten the rest of the year! Danish potato salad is the perfect side dish when grilling, or for something as simple as Danish frikadeller, and our kids love it.

When it’s summer and it’s time for beach trips and picnics, we often take potato salad with us along with a portion of Danish meatballs. That is a delicious lunch in the great outdoors.

The potato salad with radishes and chives is a delightful salad as an accompaniment to grilled food, and it’s something both adults and children love because the dressing, consisting of sour cream and mayonnaise, has a deliciously mild taste.

Ingredient notes

Precooked potatoes – preferably a variety that is firm and doesn’t “smush” out.

Chives – tastes like summer. Preferably from the garden if you have.

Shallot – gives good flavor.

Radishes – completely crispy and delicious, adds a good crunch to the potato salad.

Mayonnaise – homemade or a good store-bought version.

Sour cream – gives a slightly lighter dressing.

Sweet French mustard – gives a good taste to the dressing.

Lemon juice – a little acidity is needed.

White wine vinegar – gives flavor and acidity.

Sugar, salt, and pepper – the salad needs to be tasted and have the right balance and flavor.

How to make Danish potato salad?

It’s so easy to make the best Danish potato salad, and the best thing is that it can be made ahead of time. The longest part is actually boiling the potatoes and cooling them down afterward.

In the recipe, I assume that you have precooked cooled potatoes ready.

Cut the precooked potatoes into bite-sized pieces, then clean the radishes and slice them not too thick. Finely chop the shallot.

In a large bowl, mix mayonnaise, sour cream, mustard, lemon juice, white wine vinegar together with salt, sugar, and pepper. Mix the dressing and taste it. Add the finely chopped shallot and chopped chives to the dressing and mix it together. Add the potatoes and radishes to the dressing and toss it until the dressing is distributed.

Ingredients
  

  • 1 kg potatoes cooked and cooled
  • ½ dl chives equivalent to about one bunch
  • 8 radishes
  • ½ shallot

Dressing:

  • 1 dl mayonnaise
  • 1 dl sour cream
  • 1 tsp lemon juice or to taste
  • 1 tsp white wine vinegar or to taste
  • 2 tsp sweet mustard
  • 1 tsp sugar
  • 1 tsp salt
  • Pepper to taste

Instructions
 

  • Put all the ingredients for the dressing in a large bowl. Mix it thoroughly, taste it and adjust with more salt and pepper if necessary.
    1 dl mayonnaise, 1 dl sour cream, 1 tsp lemon juice, 1 tsp white wine vinegar, 2 tsp sweet mustard, 1 tsp sugar, 1 tsp salt, Pepper
  • Chop the chives and add it to the dressing along with finely chopped shallot onion.
    ½ dl chives, ½ shallot
  • Cut the cooked potatoes into suitable cubes and the radishes into slices.
    1 kg potatoes, 8 radishes
  • Then add the potatoes and radishes to the dressing and mix it until the dressing is evenly distributed.
  • Serve immediately or chill for later.
