Ingredients

  • 800 g salmon whole side

Marinade for salmon:

  • 2 tbsp olive oil
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • 1 tbsp fresh dill or 2 teaspoons dried
  • 1 lemon the zest
  • 1 tsp salt
  • Pepper to taste

Browned butter sauce:

  • 125 g butter
  • 1 tbsp capers
  • 2 tbsp fresh parsley chopped
  • ½ lemon zest and juice

Instructions

  • The oven is preheated to 200 degrees Celcius and set up for ordinary heat.
  • The salmon side is prepared. Go through it for bones and remove them with tweezers if you come across any.
  • Next, prepare the marinade for the salmon. In a small bowl, add the olive oil, onion powder, and garlic powder. Finely chop the fresh dill and put it in the bowl together with 1 tbsp. the lemon zest as well as salt and pepper.
    - I usually use fine salt, it is easier to distribute over the salmon.
  • Stir it all together thoroughly.
  • Now grease the salmon thoroughly in the marinade. Then you can refrigerate it for a few hours, or as I have done here in the recipe, put it in the oven immediately.
  • Place a piece of baking paper on a baking sheet and move the salmon side over. Now place the baking tray with the salmon in the middle of the preheated oven and cook it for 20 minutes.
  • When the time is up, the salmon is taken out. Let it rest on the baking sheet, or a cutting board while you prepare the butter sauce.
  • Finely chop the capers and parsley and grate the zest of the lemon.
  • In a pan, melt the butter over high heat. When it starts to get a nutty scent and is slightly brown, add the chopped capers, parsley, and lemon zest. Squeeze the juice from half a lemon into the sauce and stir.
  • Take the sauce off the heat and pour a little of it over the salmon before serving. The rest of the sauce goes in a small heated bowl and is served with the salmon.
