Cool them under cold running water, then peel the eggs.
Halve the eggs and scoop out the yolks into a bowl.
Mix the yolks with mayonnaise and finely chopped chives, and season the filling with salt and pepper.
4 tbsp mayonnaise, 2 tbsp chives, Salt, Pepper
Fill the egg halves with the filling, using a teaspoon or a piping bag for a more elegant presentation.
Arrange the shrimp on top of the eggs and sprinkle with a little more chopped chives. Optionally, garnish with lemon slices to squeeze over the shrimp. Serve with rye bread.
