Remove the pickled herring fillets from the brine and let them drain on a piece of kitchen paper.

Chop the red onion finely. Cut the apple into small cubes. Chop the capers and dill. Save some of the dill for garnish.
1 apple, ½ red onion, 2 tbsp capers, 1 bunch dill
Mix sour cream with mayonnaise. Add chopped red onion, apple, capers, and dill, and season with curry, salt, pepper, and sugar.

Cut the drained marinated herring fillets into smaller pieces, about 2 cm each. Turn the herring pieces into the curry sauce and garnish with dill and possibly more capers.
Serve with rye bread, hard-boiled eggs, and slices of fresh onion.
