Recipe for whole roasted cauliflower with parsley and lemonA whole cauliflower in the oven with delicious topping with lots of flavors. You get a crispy cauliflower with a bite to it, and good taste from parsley, garlic, lemon, and parmesan. If you want a soft cauliflower, you can boil the cauliflower before putting it in the oven.
Turn the oven to 200 degrees Celcius ordinary heat.
Wash the cauliflower head, remove the green leaves, and dry it. Put it in an ovenproof dish.
Melt the butter in a saucepan. Finely chop the parsley and garlic and put it in the melted butter together with grated lemon zest.
Spread the butter over the cauliflower, season with salt and pepper, and put the dish in the oven for 1 hour at 200 degrees celcius.
After an hour, spread grated parmesan over the cauliflower. Put the dish in the oven again for about 15 minutes until the cheese is melted and slightly golden on top.
Sprinkle with a little fresh parsley, and serve immediately, for example with fish, chicken or meat.
