Elderflower and Rhubarb Cordial

Here you get a lovely elderflower and rhubarb cordial. It might taste even better than the classic elderflower drink with this sweet rhubarb twist.

The cordial is easy to make, but it takes a few days, so you’ll need to be patient.

By all means, make a large batch if you’re at it, and freeze the cordial for later in the year.

A fresh and sweet rhubarb/elderflower drink for warm summer days. It's delightful to drink mixed with water or sparkling water, or you can use it in drinks or cocktails.

Ingredients
  

  • 12 large elderflower heads
  • 200 g rhubarb
  • 250 g sugar
  • 0.5 l water
  • 1 lemon

Method
 

  1. Quickly rinse the elderflower heads, snip off the coarse stems, and place them in a pot or plastic container, along with the sliced lemon.

  2. Wash the rhubarb, and cut it into slices of approx. 0.5 cm.

  3. Bring water and sugar to a boil. When the water boils, add the rhubarb. Give them a quick boil.

  4. Pour the rhubarb and the liquid over the elderflower heads, and let it cool down a bit before covering with a lid and placing the pot in the refrigerator.

  5. Let the cordial steep for 3-4 days before straining it and pouring it into clean bottles, then it’s ready to drink.

Ingredient Notes:

Elderflower heads Find the largest beautiful heads. It’s a good idea to pick the elderflowers in the morning when the dew is on the blossoms, as they will have the most aroma. Furthermore, you should look for the heads that are most yellow, as the completely white flowers will soon have bloomed and easily fall off. Use scissors to snip the flower heads from the bush.
 
Lemon It’s important to choose organic lemons for this recipe, as the lemon slices will steep in the cordial, and we, of course, don’t want pesticides in our cordial.
 

Serving

The cordial is strong in concentrated form, and we drink it either as a squash mixed with water or sparkling water, or else it’s excellent in drinks such as rhubarb mojito or as a Danish twist in a gin hass. No matter how you drink it, it’s recommended to drink it ice-cold, preferably with some ice cubes on a warm summer day on the terrace.
 

Shelf Life and Freezing

The cordial can last a long time if you pour it into sterilized bottles and store it in the refrigerator. The cordial can also be frozen. Freeze it either in freezer bags or in ice cube trays. If you freeze it in ice cube trays, you can easily take out a couple of cubes and add them to a glass of water or perhaps a glass of white wine or Asti. Then you have an ice-cold elderflower/rhubarb drink.
